Grilled marinated chicken tenderloins (recipe below).
Broccoli, lightly cooked in chicken broth and sprinkled with soy sauce.
Nitrate/nitrite free hot dog flowers.
Soft dinner roll.
2nd tier-pineapple cottage cheese in the cup. Cut up pineapple skewered with an animal pick.
Afternoon snack. Dinosaur sandwiches & grapes for Bryce.
Devin has bunny shaped sandwiches and sliced plums.
Recipe for chicken
I am all about convenience and cutting corners when I can. This chicken is really simple and super yummy. I am a Costco shopper. I buy the big bags of frozen chicken tenderloins and use those in this recipe. This is marinated the night before so there is no need to defrost.
Ingredients: (all of these measurments and amounts are guess-timations...I dont measure)
Frozen chicken tenderloins, about 10
2 large cloves of garlic or 3 small minced
juice of one lemon
about 1 to 1 1/2 cups of extra virgin olive oil(enough to coat your chicken)
Salt to taste.
2 one gallon ziploc bags.
In a bowl put garlic, lemon juice and pulp, and whisk in olive oil. Salt to taste (before you put in your chicken.)
Put your chicken into the bowl and toss to coat. Put everything into ziploc bag. Then double bag it so it doesnt leak.
The next morning, grill on a grill pan, set it on a plate to cool. Cut up and put in your bentos. :)
Edit:
The kids did not eat the hot dog flowers. They said they were too salty. If I try those again, I'll pack some plain rice along with them. I may try making them with Lil Smokies...not exactly healthy, but they may like those better. Not sure how they will taste cold.
